Homemade Dark Chocolate
Melt the coconut oil (I like to use a double boiler on a low simmer), allow to cool just slightly, then put all ingredients into a bowl – whisk together to combine well. Pour into a mold (I like the Tovolo ice cube molds), and put in freezer. They should be ready in 15 mins!!
They taste a little like a Mounds candy bar. This recipe has to come with a warning – you will find it hard to buy dark chocolate at the store ever again after trying this! Best kept stored in freezer.

What a perfect combination! Dark chocolate is actually my favorite. And having coconut oil as one of its ingredients is even better. This is such a healthy treat for me!
I try and have some coconut oil every day. Making chocolate with it is a great way to “force yourself” to eat it. I use a pan made to bake tiny muffins, one teaspoon in each. Then into the freezer. They pop out with slight pressure close to the edge. Instant portion control. Have added almonds to the muffin tin before pouring chocolate over – works great.
